Buckwheat is loaded with nutrients, especially protein, and it has a nutty earthy flavour. It is most commonly ground into a dark, gritty flour and used to make everything from pancakes to soba noodles. Eastern European also like their buckwheat crushed into small groats, which they toast in oil and use to make side dished and breakfast cereals.
How to Prepare:
Soak kernels in water for 30 minutes
Cover with water in a saucepan. Add a stock cube for flavour if you wish
Bring to the boil and simmer until water has been absorbed and season and add meat or vegetable of your choice.
