Plain Muffin Recipe
Preparation: Preheat oven to 180C (conventional), spray muffin try or line try with patty pans. Whisk an egg and add wet ingredients (water (75ml), oil (30ml), vanilla essence (1 1/2 tsp)) and blend. Add self raising flour (150g) and sugar (85g). Fold in flour and hand mix until batter is uniform. (You may use an electric mixer on slow until batter is uniform). Pour mix into patty pans. Bake for approximately 12-15 minutes. Remove from oven and let rest on wire tray before serving.
Ingredients:Gluten free flour (maize, rice), starch (maize, tapioca), raising agents (450, 500), thickeners (Cellulose 412, 464, 466), iodised salt.
