The Red or Persian Lentil, which is more commonly sold split, is commonplace in many Asian and Indian recipes. The variety ‘Northfield’ is an Australian variety that is much sought after overseas whole, due to its small plump shape and it’s consistent seed coat. Like the French green lentil, its small size means no soaking and adds an earthy, slightly spicy flavour to numerous dishes. Gluten Free.
